- 3 cups Three-In-One Meaty Tomato Sauce (Hunt's web recipe)
- 1 can (15 oz each) Ranch StyleŽ Black Beans, drained, rinsed
- 1 can (10 oz each) Ro*TelŽ Original Diced Tomatoes & Green Chilies, drained
- 1 cup frozen whole kernel corn
- 8 slices prepared polenta, 1/2-inch thick (8 slices = about 12 oz)
- 1/2 cup shredded reduced-fat Cheddar cheese (1/2 cup = 2 oz)
- Chopped fresh cilantro, optional

| Directions | - Combine tomato sauce, black beans, diced tomatoes and corn in large microwave-safe bowl; mix well. Microwave, covered, on HIGH 3 to 5 minutes or until hot. Set aside, still covered.
- Heat large nonstick skillet over medium-high heat 1 minute. Add polenta slices and cook 3 minutes per side, or until golden brown. Sprinkle cheese evenly over polenta slices after turning once.
- Transfer hot meat mixture to 8x8-inch baking dish. Top with polenta slices. Garnish with cilantro, if desired.
