Ingredients

  •   PAMŽ Original No-Stick Cooking Spray
  • 1 cup shredded Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • 2-1/4 pounds boneless skinless chicken breast halves (6 oz each)
  • 1 tablespoon ParkayŽ Original Spread-tub
  • 1/4 cup sliced green onions
  • 1/2 cup fat free milk
  • 2/3 cup frozen chopped spinach, thawed, squeezed dry
  • 1 jar (2 oz each) chopped pimientos, drained
  • 1/8 teaspoon salt
Directions
  1. Preheat oven to 350°F. Spray 13x9-inch baking dish with cooking spray.
  2. Combine cheese and Italian seasoning in shallow dish. Add chicken; turn to evenly coat both sides. Arrange chicken in prepared baking dish. Set aside remaining cheese mixture for later use.
  3. Melt Parkay in small saucepan over medium heat. Add onion; cook 2 minutes, or until tender, stirring occasionally. Add milk, cook until thickened, stirring frequently. Add spinach, pimiento, and salt; mix well. Spoon over chicken; top with remaining cheese mixture.
  4. Bake 30 to 35 minutes or until chicken is no longer pink in centers and juices run clear (165°F).
